This recipe is Whole 30 and Paleo friendly!
It’s not a myth that chicken soup can boost your immune system when you are fighting a cold or an infection. Because of the herbs that are added into chicken soup along with the cleansing effect of adding more liquids to your diet, it really can assist with healing. I recently made a pot myself for this very reason and added plenty of herbs. When possible fresh herbs will serve you much better.

This recipe offers these herbal benefits:
Ginger: It’s a powerful anti-inflammatory and also soothing for digestion
Garlic: Garlic is anti-bacterial and anti-inflammatory
Turmeric: Also very anti-inflammatory
Rosemary: A good anti-oxidant, plus has anti-septic and anti-fungal properties
Thyme: May help with allergies or sinus issues. It’s a good disinfectant and immune booster.
Fresh, homemade soup will beat the stuff from the can any day and help you get on the road to recovery.
Prep Time: 20 minutes
Cook Time: 20 minute
Here’s the recipe I formulated:
1 tablespoon avocado or olive oil
1 diced yellow onion
2 large carrots (or 1 cup chopped)
3 celery stalks (1 cup diced)
3 cloves of garlic
1 tablespoon fresh grated ginger
1 tablespoon grated turmeric
1 teaspoon of freshly chopped rosemary
1 teaspoon freshly chopped thyme
½ teaspoon salt
5 cups chicken stock (add water if you run out of chicken stock)
1 ½ cups of rice
1 lb. of cooked shredded chicken
Instructions:
Note: This recipe assumes you have already cooked, plain shredded chicken.
Start by prepping the onion, carrots, garlic, celery and other herbs.
Next cook the rice so that it will be ready in time to add into the mix.
Put your large pot on high heat and add the olive oil. Next add the chopped onion, garlic, carrots and celery. Stir and cook them until the onion turns color. Add the grated ginger and turmeric and sauté them together
Add the chicken broth, chicken breast, rosemary, thyme and salt. Bring it to a boil, then stir in your rice. Let it simmer for about 20 minutes and you should be ready to serve.
