
I love soups and one of my favorites is Chicken Tortilla Soup. It’s full of flavor and super comforting on a cold or rainy day. But enough of that, I hate it when I search for a recipe online and have to scroll and scroll… and scroll some more through some long story and tons of pictures before I ever get to what I was actually looking for… a recipe!
So here you go:
Ingredients:
1 Tablespoon olive oil½ onion diced
2 garlic cloves, minced
4 cups chicken broth
1 can fire roasted diced tomatoes
1 can black beans, drained and rinsed
1 cup of corn
½ teaspoon cumin
1 tablespoon salt
¼ teaspoon black pepper
1 lb shredded boneless chicken breast (or about 4 cups)
1 tablespoon lime juice
1 tablespoon fresh cilantro
For garnish if desired:
- Chopped Avacado
- Tortilla strips
- Cilantro
- Or Shredded Cheese
Instructions:
- Add oil to a large saucepan
- Add in onion and saute for 2-3 minutes
- Add in garlic and cook for 1 minute
- Pour in chicken broth, crushed tomatoes and black beans
- Measure out spices and those too
- Simmer for about 10 minutes
- Stir in precooked shredded chicken
- Take off the heat and add in lime juice and cilantro for more flavor
- Garnish with your choice of avocado, tortilla strips, cilantro or shredded cheese. (Yum!)
